Recipe: Fairy Cakes & Buttercream Frosting

A few of you have asked for the recipe for the cupcakes I brought in last week...enjoy!

Fairy Cakes & Buttercream Frosting
From Nigella Lawson's How to be a Domestic Goddess

1/2 cup unsalted butter, softened
7 tablespoons sugar
2 large eggs
3/4 cup self-rising cake flour
1/2 teaspoon vanilla extract
2-3 tablespoons milk


Preheat oven to 400. Put all ingredients in a food processor and blitz until smooth. Pulse while adding the milk down the funnel, to make for a soft, dropping consistency. Spoon into 12 cupcake cups.

Bake for 15-20 minutes or until they are golden and spring back when you touch them.. Take them out of the pan and let them cool on a wire rack.

Buttercream frosting

1 lb. confectioners' sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
3 tablespoons milk
Food coloring (optional)

In large bowl, beat together sugar, butter, vanilla and milk until smooth. If necessary add more milk until frosting is spreading consistency. If desired, add a few drops of food coloring. Mix everything well.
